Super fluffy pancakes and waffles

This is super easy and makes the lightest pancakes ever.

Take your regular pancake mix and substitute sprite in the place of the called for liquid.
Seriously that's it!
The carbonation in the sprite fluffs the batter.
You can also use what ever soda you have on hand, sprite is just nice because it doesn't change the color.

Enjoy.

Martha Stewarts upside down cake with a twist

Ok first of all I believe every secret ingredient started out as an accident as this recipe will show you.

Martha Stewart has a new show called Martha Bakes which shows you  tips on how to bake. Martha's new show is very good and the first episode featured an upside down cake that looked marvelous however I don't have time to make a cake from scratch. I decided to make the cake using a yellow butter cake mix and it turned out amazing. The recipe had plums at the bottom instead of the traditional pineapple but Martha did say you could use any fruit you liked so I used pears.
I started by peeling 4 pears and thinly slicing them. After layering the pears at the bottom of my cake pan I put a light coating of maple syrup over them and let it set while I made the cake mix. Next I made the cake mix following the directions on the box, (well almost) I kept thinking the cake mix was very dry and did not realize that I had not added the water until I had already put the cake in the oven. So to recap make the cake mix according to the directions on the box but omit the water, add 1/4 cup of Disaronno or your favorite liqueur in the place of the water. Poor the batter in your cake pan over your pears and bake as directed but check the cake before you remove it from the oven, it seems to need a little extra time to cook with out all of the water. I know it sounds backwards but it's true.
I did not ice my cake but I did pour some simple syrup over it because I feared that without the water the cake would be very dry.

This ended up being the best cake I have ever made, leaving the water out ended up being a blessing in disguise.

Ingredients:
4 pears or fruit of your choice
1 yellow butter cake mix
ingredients called for on the cake mix( one stick of butter and three eggs)
1/4.cup Disaronno
1. cup simple syrup
Simple Syrup
mix equal parts of sugar and water in a pan over heat until thoroughly dissolved
in this case I used half a cup of each

About my blog

I have found that all though I love to cook and bake I don't like all of the time that I have to put into most recipes. I love figuring out a ways to make the recipes that I see on tv and online by using store bought ingredients. Whats the harm in people thinking you slaved away in the kitchen when you really didn't.
